The voltage changes in the different signals along this string corresponds with the dots (commonly but somewhat incorrectly referred to as pixels) as they're drawn in horizontal lines across the screen. When an analog video signal is sent to a display regardless of its method of transmission (Composite, S-Video, RGBx, YPbPr) you can think of it as multiple continuous strings of AC voltages. So in the section above there's a little bit of explanation about what sync does, but let's break it down just a little further.
